We all like to have something we can come home to that is tasty and quick. What about something that is tasty, quick, nutritious, and slimming at the same time. You can eat it cold or warmed up if you like. You can prepare one or two of these each week and you and anyone else in your household can help themselves any time they like and you’ll know it’s doing them good.
I thought you may enjoy a quick little Mediterranean diet snack recipe that I enjoy and can be slapped together any time quickly as long as you have the ingredients handy. Keeps well in the fridge for days. Let me know if you like it and from time to time I’ll send you more recipes.

With Fetta Cheese, Eggplant and Cashew Nuts In Pasta Salad
This Mediterranean recipe is used commonly not only in the Mediterranean diet regions but across the western world as well. It was once prepared for me, and I have been using it ever since. You can even eat it with the eggplant still warm and it still tastes diets could be avoided since you won’t be hungry between meals.
Here we go,
2 eggplant (diced)
250g penne pasta (any paste will do!)
3/4 small cup of olive oil
4 tablespoons balsamic vinegar
3 garlic cloves, crushed
1 cup of freshly chopped mint leaves
black pepper
250g fetta cheese, grated coarsely or packet
100g unsalted cashews

Makes 6-8 servings
Change to: servings US Metric
30 minutes 30 mins prep
1. Soak chopped eggplant in cold salted water (around 2 tbsp salt to ? litre of water) for about ? hour.
2. Drain, rinse and dry off on a clean tea towel.
3. Heat a little olive oil in a pan and fry the cubes until golden, remove and drain on paper kitchen towels. Place in large bowl.

4. Cook pasta as per instructions, drain, rinse and then add to the eggplant.
5. Mix (you can shake in an empty jar) olive oil, Balsamic vinegar, garlic, mint, and black pepper to taste

6. Pour over the pasta mixture and mix carefully and thoroughly.
7. Grate the cheese over the top and sprinkle your cashew nuts on top (the nuts are important to the success of this dish).

Searching for the perfect mate can be one of life’s greatest challenges. After all, forever is a long time. You want to make the right decision. Dating itself can be really trying. It can be hard to find the right people. What if they don’t share the same values and beliefs that you do? How do you handle that and when? The dental hygienist who chain-smoked. The girl who didn’t shave her legs, her armpits and didn’t wear deodorant (it took a few dates to begin to figure this one out). I remember one Friday night where I thought I had met someone with real potential. She was highly educated, respectful and thoughtful. Several dates later, she showed up at my house with an open bottle of wine, already drunk. And then she stormed off when I mentioned concern that she had been drinking and driving. So how do you find the right people? How do you at least give a first date a chance, by taking the time to get to know people coming from a similar place as you? The workplace can be a popular source, if there are lots of employees and some that believe in God as you do. But what if you work too much and don’t have time to meet people? Or, what if meeting people is quite a scary experience, and you’d like to find a “like minded group of people”, that you can get to know via email first before actually meeting? The answer, more and more, is the Internet. Never before has the world’s millions of Jewish singles, been able to find sources of other singles who are just like they are. The best part is these specific sources of singles can be pre-determined ahead of time. For instance, you’ll know you’re talking to someone who is Jewish, because you found their ad on a Jewish dating site. Make sense? Much easier than trying to make these discoveries of values and beliefs over coffee or dinner. You can further refine your search by specific age ranges, kids or not, divorced or not, white, black, location, income level, career path, Yankees fan or not (very important!), etc. I finally found my Soul Mate through a personals ad on a website. We lived in different communities but on the same island (20 miles apart). More importantly, our hearts, beliefs, values, sense of humor and general outlooks were very similar. And we knew that before ever meeting. It was wonderful courtship. We married the next year. And to this day, many years later, we laugh that the first date never ended. I am simply wasting away, people. Yes, it is with great relish that I FINALLY announce I am in the 100’s again. Specifically,a dainty 199.2. Wooo Hoooo! So what do you do when you go under 200? Have a party? Invite everyone? Put up a signature on your instant Messenger letting everyone know you’re no longer as fat as before? Yeah, none of the above. It is one of those milestones that you don’t really want to advertise I guess but at least I can tell my FS buddies because YOU will understand! So, I don’t know what on earth happened but today I got on the scale and was 3 lbs lighter. I actually rubbed my eyes and shook my head, thinking it couldn’t be. Then, I weighed myself 3 more times just to make sure. AND–all of the sudden–I’m able to fit into about 5 pairs of my pre-pregnancy pants. And they’re not like squeezed shut either — I’m workin it! I simply don’t know what to do with all this skinniness! lol Now, if only I could lose 130 lbs of sister-in-law I’d be in business! Nah, just kidding. She has been really sweet since we returned. I think she realized she was over the top on the trip and now that we are all home and in our own homes the events of the trip seem far more distant and hilarious. Ahem. Almost. Hope everyone else is doing fabulous! PS - Lucybell and others, I will calculate and deliver on the exercise I owe you but I might have to make a couple installments. It took me a LOT longer to get under 200 than I hoped.
